Vodka Pie Crust

From Cooks Illustrated, this recipe for pie crust uses vodka. This lets you add more liquid, so that the crust is easier to roll out. The alcohol keeps excessive gluten from forming, so the crust isn't tough, and then the alcohol vaporizes in the oven:
